The perfect side dish for chicken, pork or steak. Sautéed carrots and mushrooms combined with tender wild rice and jasmine brown rice.
Ingredients

1 cup jasmine brown rice

½ cup wild rice
-
2½ cups unsalted or low sodium chicken bone broth or vegetable broth

1½ tablespoons Umami Mushroom Seasoning Blend, divided
-
1 tablespoon Garlic & Herb Seasoning Blend, divided
-
¼ teaspoon sea salt, divided
-
2 tablespoons extra virgin olive oil
-
1 cup chopped carrots
-
½ cup chopped onion
-
1 (5 ounce) package sliced shiitake mushrooms
Directions
Place rice in a colander. Rinse 1-2 minutes or until water runs clear. Transfer to a 2-quart or larger saucepan.
Add broth, 1 tablespoon Umami Mushroom Seasoning Blend, 1½ teaspoons Garlic & Herb Seasoning Blend and ⅛ teaspoon salt to rice. Bring to a boil. Reduce heat, cover and simmer until rice is tender and liquid is absorbed, about 45-50 minutes.
Meanwhile, in a large skillet, heat olive oil over medium-high heat. Add carrots and onions; sauté 5-6 minutes. Add mushrooms, remaining 1½ teaspoons Umami Mushroom Seasoning Blend, remaining 1½ teaspoons Garlic & Herb Seasoning Blend and remaining ⅛ teaspoon salt. Continue sautéing until mushrooms are softened and nicely browned.
Stir rice into vegetables and sauté 1-2 minutes.
