Ingredients: Organic black beans, organic onion, organic carrots, organic celery, organic green bell pepper, organic garlic, organic cumin, organic jalapeño, organic oregano, organic black pepper.
YOU WILL NEED (4 SERVINGS):
- 4 slices reduced sodium bacon, chopped
- 6 cups unsalted or reduced sodium chicken broth or stock
- ½ teaspoon sea salt, optional
- 1 tablespoon apple cider vinegar, optional
- 1 tablespoon demerara (raw) sugar or honey, optional
DIRECTIONS:
- In large saucepan over medium heat, sauté bacon until just starting to crisp, about 4-5 minutes.
- Add broth and contents of package, scraping bits off bottom of pan; salt as desired. Bring to a simmer; simmer 20-25 minutes or until beans and veggies are very tender and broth is slightly thickened.
- Place about half the soup in a blender and purée. Add back to pan with vinegar and sugar. Stir to combine and simmer 5 minutes. Makes 4 servings.
