Simple and tasty, this is the perfect side dish to use some of that zucchini growing in the garden!

Zesty Italian Roasted Zucchini

Ingredients

  • 2 medium zucchini

  • 1 tablespoon extra virgin olive oil

  • 1 tablespoon Zesty Italian & Pizza Seasoning Blend

  • ⅛ teaspoon sea salt, optional

  • ¼ cup grated Parmesan cheese, optional

Directions

  1. Preheat oven to 425°F. Line a large rimmed baking sheet with parchment paper.

  2. Cut zucchini in half lengthwise; slice about ½-inch thick. Place on baking sheet. Drizzle with olive oil. Sprinkle with Zesty Italian & Pizza Seasoning Blend and salt, if desired. Toss to coat.

  3. Spread to a single layer. Sprinkle with cheese, if desired. Bake 15-20 minutes or until desired doneness.
