Jasmine rice simmered with carrots, chicken broth and Hot Curry Seasoning Blend. Finished with raisins. The perfect side dish.
Ingredients

2 tablespoons Extra Virgin Olive Oil

¾ cup diced carrots
-
1 cup jasmine rice

1 tablespoon Hot Curry Seasoning Blend

2 cups no salt added chicken bone broth or vegetable stock

¼ teaspoon sea salt, optional

3 tablespoons raisins
Directions
In a medium saucepan, heat Extra Virgin Olive Oil over medium-high heat. Add carrots; sauté 2-3 minutes.
Stir in rice and Hot Curry Seasoning Blend. Sauté 1 minute. Add chicken broth and salt, if desired. Bring to a boil. Reduce heat, cover and simmer 15-20 minutes or until liquid is absorbed.
Remove from heat. Stir in raisins. Cover and let stand 5 minutes before serving.
