Jasmine rice simmered with carrots, chicken broth and Hot Curry Seasoning Blend. Finished with raisins. The perfect side dish.
Ingredients
- 
2 tablespoons olive oil 
- 
¾ cup diced carrots 
- 
1 cup jasmine rice 
- 
            
1 tablespoon Hot Curry Seasoning Blend 
- 
2 cups no salt added chicken bone broth or vegetable stock 
- 
¼ teaspoon sea salt, optional 
- 
3 tablespoons raisins 
Directions
- In a medium saucepan, heat olive oil over medium-high heat. Add carrots; sauté 2-3 minutes. 
- Stir in rice and Hot Curry Seasoning Blend. Sauté 1 minute. Add chicken broth and salt, if desired. Bring to a boil. Reduce heat, cover and simmer 15-20 minutes or until liquid is absorbed. 
- Remove from heat. Stir in raisins. Cover and let stand 5 minutes before serving.
