This version of paella, uses frozen fire-roasted vegetables to make a quick weeknight meal…no slicing or dicing involved. Featuring Culinary Genie Salt-Free Sazón Seasoning Blend and Culinary Genie Salt-Free Garlic & Herb Seasoning Blend.
Ingredients

1 tablespoon avocado oil

3 cups frozen fire-roasted primavera Mistura vegetables (such as PuraVita from Costco)

2 cups Arborio rice
-
5 cups water
-
1 tablespoon Salt-Free Sazón Seasoning Blend

1 tablespoon Salt-Free Garlic & Herb Seasoning Blend

½ teaspoon smoked paprika
-
½ teaspoon Spanish saffron thread, crumbled

½ teaspoon sea salt, optional

½ cup frozen petite peas
Directions
In a 13-inch paella pan or large skillet, heat oil over medium-high heat. Add frozen vegetables; sauté 4-5 minutes.
Add rice; sauté for 3 minutes. Stir in water, Salt-Free Sazón Seasoning Blend, Salt-Free Garlic & Herb Seasoning Blend, paprika, saffron and salt. Stir well.
Cook, undisturbed, 15-20 minutes or until rice is tender and liquid is absorbed. Top with peas the last 5 minutes of cooking.
Remove from heat. Let stand 5-10 minutes before serving.
