A quick and easy refreshing summer salad. The perfect accompaniment to any grilled meat, poultry or fish. For a dairy-free option, omit feta cheese or use a dairy-free feta. Featuring Culinary Genie Salt-Free Garden Herbs Seasoning Blend.
Ingredients

3 medium tomatoes, seeded, cut into bite-sized pieces

2 small cucumbers, cut in half lengthwise, sliced

½ small red onion, thinly sliced, slices cut in half

⅓ cup crumbled feta cheese or dairy-free feta cheese, optional

12 pitted kalamata olives

8 pitted green olives
-
2 teaspoons Salt-Free Garden Herbs Seasoning Blend

¼ cup extra virgin olive oil

Freshly cracked black pepper

Chopped fresh parsley, for garnish, optional
Directions
On a serving platter, layer tomatoes, cucumbers, onion, feta and olives.
Sprinkle with Salt-Free Garden Herbs Seasoning Blend and drizzle with olive oil. Let stand 15 minutes.
Liberally grind black pepper over salad and garnish with chopped parsley, if desired.
