Classic spinach dip made over to be vegan and gluten-free. But don't be fooled, this dip is packed with flavor...you'll never know it's good for you!
Ingredients

1 (15 ounce) can cannellini beans, rinsed and drained

¼ cup unsweetened non-dairy milk of choice (almond, cashew, coconut)

½ cup vegan mayonnaise or mayonnaise

1 tablespoon Extra Virgin Olive Oil

1 teaspoon Garlic & Herb Seasoning Blend

1 (14 ounce) can artichoke hearts, well drained and chopped

1 (10 ounce) package frozen chopped spinach, thawed, drained and squeezed dry

1 (8 ounce) can sliced water chestnuts, drained and chopped

½ cup chopped green onions

½ cup diced red bell pepper

1 tablespoon Mediterranean Herb Seasoning Blend

Assorted fresh vegetables, gluten-free pita chips, dippers of choice
Directions
In food processor or blender, combine first 5 ingredients. Blend until smooth. Transfer to a large bowl.
Add remaining ingredients to bowl with bean mixture. Gently mix to combine. Salt to taste. Refrigerate 1-2 hours or up to overnight.
Serve with assorted fresh vegetables, pita chips and/or crostini.
