Spicy Black Bean & Corn Burgers come together in less than 30 minutes for a hearty, flavorful meatless meal. Made with Culinary Genie Salt-Free Fajita Seasoning Blend, these burgers combine black beans, sweet corn and a touch of heat for a satisfying bite. Serve them on toasted buns with your favorite toppings like lettuce, tomatoes, guacamole or pico de gallo for an easy lunch or dinner made with organic ingredients and perfect for reduced sodium cooking.
Ingredients

3 cups cooked black beans or 2 (15 ounce) cans no salt added black beans, rinsed and drained

1 medium fresh jalapeño chile pepper, seeds and membranes removed, diced

2 tablespoons hot or medium fresh pico de gallo

2 teaspoons Culinary Genie Salt-Free Fajita Seasoning Blend

1 cup frozen whole kernel corn, thawed

⅔ cup plain panko bread crumbs or gluten-free panko bread crumbs

2 tablespoons avocado oil

6 hamburger buns of choice, toasted

Garnishes such as lettuce, tomatoes, guacamole, pico de gallo, sliced jalapeños, optional
Directions
In large bowl, mash 1 cup of beans; set aside.
In a food processor or blender, combine remaining 2 cups beans, jalapeños, pico de gallo and Culinary Genie Salt-Free Fajita Seasoning Blend. Process until mixture becomes a paste.
Transfer mixture to bowl with mashed beans. Add corn and bread crumbs. Mix to combine; salt as desired. Form into 6 patties.
In large skillet, heat oil over medium-high heat. Add burgers; cook until browned on both sides, about 8 minutes.
Serve burgers in toasted buns with desired garnishes.
