This smoky tomato dip combined with warm burrata cheese is a wonderful appetizer. Slow cooked on a smoker but can easily be baked if you don’t have a smoker. Featuring Culinary Genie Salt-Free Garlic & Herb Seasoning Blend and Culinary Genie Salt-Free Mediterranean Herb Seasoning Blend. We recommend serving with our Grilled Garlic & Herb Bread recipe for dipping.
Ingredients
-
1 (10 ounce) container grape or cherry tomatoes, cut in half
-
1 tablespoon extra virgin olive oil
-
2 teaspoons Salt-Free Garlic & Herb Seasoning Blend
-
1½ teaspoons Salt-Free Mediterranean Herb Seasoning Blend
-
2 tablespoons grated pecorino or Parmesan cheese
-
1 (4 ounce) burrata cheese ball (from 8 ounce package)
Directions
Prepare smoker grill to 275°F with a mild wood.
In an oven-proof 1½-quart baking dish, combine tomatoes, olive oil, Salt-Free Garlic & Herb Seasoning Blend and Salt-Free Mediterranean Herb Seasoning Blend; salt as desired. Toss to coat well.
Place in smoker; smoke 1 hour. Using a fork, smash tomatoes to desired chunkiness. Stir in pecorino cheese. Continue smoking ½-1 hour.
Place burrata cheese ball in the center of tomatoes. Continue smoking 10-15 minutes or until cheese is warmed through.
Serve with desired dippers (we recommend our Grilled Garlic & Herb Bread recipe)
Notes
Bake Option: Preheat oven to 275°F. Continue with step 2 in the oven.
Note: Recipe was tested on a Recteq smoker with a mixture of hickory and oak.
