Smoked Lobster Mac & Cheese is a rich, creamy pasta dish with smoky cheese, tender langostino lobster and bold blackened flavor. Ingredients
1 (8 ounce) package frozen langostino lobster (such as Pier 33 Gourmet)
2 teaspoons avocado oil
1 tablespoon + 1 teaspoon Culinary Genie Salt-Free Blackened Seasoning Blend, divided
16 ounces penne or cavatappi pasta or gluten-free pasta
3 tablespoons butter
3 tablespoons all-purpose flour or gluten-free flour
2 cups half & half
8 ounces smoked Gouda cheese, shredded
8 ounces sharp Cheddar cheese, shredded
8 ounces Monterey jack cheese, shredded
Directions
Prepare smoker to 350°F using a mild flavored wood. Line a baking sheet with aluminum foil and top with a baking rack. Set aside.
In medium bowl, combine frozen langostino lobster, avocado oil and 1 teaspoon Culinary Genie Salt-Free Blackened Seasoning Blend; toss to coat. Transfer to prepared baking sheet in a single layer on rack. Place baking sheet in smoker. Cook 20 minutes; remove from smoker.
Prepare pasta according to package directions until al dente; drain. Return to pan; set aside.
Meanwhile, in large saucepan, melt butter over medium heat. When melted, whisk in flour. Cook, whisking constantly, 1 minute. Slowly whisk in half & half; continue whisking and bring to a simmer. Whisk in half the cheese and remaining 1 tablespoon Culinary Genie Salt-Free Blackened Seasoning Blend. Whisk until melted and smooth.
Pour cheese sauce over pasta in pan. Toss to coat well. Stir in langostino lobster. Toss to combine. Transfer to a greased 13x9-inch baking pan. Top with remaining cheese.
Place in smoker. Cook until bubbly and cheese is golden brown, about 35-40 minutes. Remove from smoker; let stand 5 minutes before serving.
