Classic meatloaf with a cheesy and smoky flavor, what could be better. Can easily be made gluten and/or dairy-free with a couple simply swaps.
Ingredients

1 pound 85% lean ground beef

1 pound ground pork
-
1 cup chopped onion
-
¾ cup plain panko bread crumbs or gluten-free panko bread crumbs

¾ cup grated Parmesan cheese or vegan Parmesan cheese

¼ cup half & half or dairy-free milk of choice

2 large eggs, beaten
-
2 tablespoons All-American BBQ Seasoning Blend

2 teaspoons Garlic & Herb Seasoning Blend

2 cups shredded Cheddar cheese or vegan Cheddar cheese
Directions
Prepare smoker to 350°F using a mild wood.
In large bowl, combine all ingredients except Cheddar cheese. Mix until well combined.
Add Cheddar cheese and mix until just combined. Transfer to a 10-inch cast iron skillet, pressing gently into skillet.
Place skillet on smoker. Smoke until internal temperature reaches 160°F on an instant-read food thermometer, about 1-1½ hours.
Notes
Recipe was tested on a Recteq smoker with a mixture of hickory and oak.
