This batch cooking recipe is perfect for all your
Tex-Mex chicken needs. Make ahead in the slow cooker, shred or chop the chicken
and use in tacos, burritos, enchiladas, salads or any other recipe that calls
for taco seasoned chicken.
Ingredients

3 pounds boneless, skinless chicken breasts and/or thighs

½ teaspoon sea salt, optional

3 tablespoons Taco Seasoning Blend
Directions
Lightly season chicken with salt as desired. Layer in a 4-quart or larger slow cooker, generously sprinkling each layer with Taco Seasoning Blend; toss to coat well.
Cook on LOW 5-7 hours or until chicken easily shreds with a fork.
Remove chicken from crock. Shred or chop as desired. Transfer back to crock and toss in sauce. Continue cooking on LOW for 30 minutes.
Strain off liquid and use chicken as desired. Or portion into storage containers (½ cup per serving) and refrigerate or freeze.
Notes
No need to add water, chicken gives off enough liquid
to not need to add water while cooking.
