Tofu, broccoli and cauliflower tossed with Sazón Seasoning Blend and baked then served over quinoa for the perfect quick and easy vegetarian meal.
Ingredients

8 ounces organic extra-firm tofu, cut into 1-inch cubes

1 cup water
-
½ cup quinoa
-
2 teaspoons Garlic & Herb Seasoning Blend, divided

2 tablespoons extra virgin olive oil
-
1 tablespoon Sazón Seasoning Blend

2 cups broccoli florets
-
2 cups cauliflower florets
-
2 tablespoons smoked almonds, chopped
Directions
Preheat oven to 425°F. Place tofu cubes between several layers of paper towels. Place a heavy pan or plate on top; let stand 10 minutes to press out excess liquid.
In small saucepan with cover, combine water, quinoa and 1 teaspoon Garlic & Herb Seasoning Blend; salt as desired. Bring to a boil. Reduce heat, cover and simmer 15 minutes. Remove from heat; set aside.
Meanwhile, in medium bowl, combine olive oil, Sazón Seasoning Blend and remaining 1 teaspoon Garlic & Herb Seasoning Blend; salt as desired. Add tofu cubes; toss to coat well. Remove tofu and place on a parchment-lined baking sheet.
Add broccoli and cauliflower to bowl with seasoned oil; toss to coat. Transfer to baking sheet. Bake 20 minutes, stirring halfway through.
Divide quinoa among 2 dinner bowls or plates. Top with tofu and vegetables. Sprinkle with chopped almonds.
