This recipe is a nod to the classic Puerto Rican staple - Pernil - minus all the added salt and MSG in the traditional seasonings used. This pork is rubbed with our Sazón Seasoning Blend and slow roasted to perfection until it's falling apart tender. It may not be exactly like Pernil, but it's pretty darn close...and oh, so good!
Ingredients

1 tablespoon Garlic & Herb Seasoning Blend

1 tablespoon water

3 tablespoons Extra Virgin Olive Oil, divided

2 teaspoons Sazón Seasoning Blend

½-1 teaspoon sea salt, optional

3 pound pork shoulder Boston butt roast

1 small onion, cut into 8 wedges
Directions
Preheat oven to 275°F. In small microwave-safe bowl, combine Garlic & Herb Seasoning Blend and water. Microwave on HIGH 20 seconds. Stir; cool slightly. Add 2 tablespoons Extra Virgin Olive Oil, Sazón Seasoning Blend and salt; Stir to combine.
Rub mixture all over roast. Set aside. In oven-proof Dutch oven or pan, heat remaining 1 tablespoon Extra Virgin Olive Oil over medium-high heat. When hot, add roast. Sear on all sides until nicely browned, about 10 minutes. Add onion to pan while searing last side. Insert an oven-proof meat thermometer into center of roast.
Transfer pan to oven. Bake, uncovered, until internal temperature reaches 200°F on meat thermometer, about 6 hours, or until meat easily falls apart with a fork. Remove from oven; cover and let stand 20 minutes. Pull and use as desired.
Notes
Serve with rice and beans.
