Salmon Burgers with Garlicky Feta Sauce

These salmon burgers are a bunless ‘fork & knife’ burger, perfect for a lower carb meal, but can easily be served in a bun. Pan-fry or grill and top with a garlicky feta sauce and tomato-cucumber relish. Featuring Culinary Genie Salt-Free Garlicky Feta Dip Mix. Simple gluten-free and dairy-free swaps in the recipe.

Ingredients
1 pound salmon fillets, skin removed, cut into chunks
½ cup plain panko bread crumbs or gluten-free panko bread crumbs
4 ounces feta cheese or dairy-free feta cheese, crumbled, divided
2 large eggs, beaten
3 tablespoons chopped green onions, divided
Juice of 1 lemon (about 2 tablespoons), divided
1 packet Culinary Genie Salt-Free Garlicky Feta Dip Mix, divided
½ cup plain Greek yogurt or dairy-free plain yogurt
¼ cup sour cream or dairy-free sour cream
12 grape tomatoes, quartered
2 mini cucumbers, chopped
¼ cup diced red onion
1 tablespoon avocado oil
Directions
In a food processor or high-power blender, combine salmon, bread crumbs, 2 ounces (about ½ cup) feta cheese, eggs, 2 tablespoons green onions, 1 tablespoon lemon juice and 1 tablespoon Culinary Genie Salt-Free Garlicky Feta Dip Mix; salt as desired.
Pulse food processor until salmon is coarsely ground and mixture is well combined. Form into 4 large patties. Refrigerate, covered, 30 minutes to firm up or until ready to use (up to 1 day ahead).
Meanwhile, in small bowl, combine yogurt, sour cream, remaining 2 ounces (about ½ cup) crumbled feta, remaining 1 tablespoon chopped green onions, remaining 1 tablespoon lemon juice and remaining Culinary Genie Salt-Free Garlicky Feta Dip Mix (about 1 tablespoon). Mix until well combined; salt as desired. Refrigerate, covered, until ready to serve.
In another small bowl, combine tomatoes, cucumbers and red onion. Toss to coat. Set aside or refrigerate, covered, until ready to serve.
In large skillet, heat oil over medium heat. Add salmon burgers. Cook, turning over when nicely browned, until internal temperature reaches 145°F on an instant-read food thermometer, about 8-10 minutes.
Serve dolloped with garlicky feta sauce and tomato-cucumber relish.
