Sliced carrots tossed with olive oil, honey and Hot Curry Seasoning Blend then roasted to tender and caramelized perfection.
Ingredients

4 medium carrots (about ½ pound), peeled and sliced

1 tablespoon Extra Virgin Olive Oil

1 tablespoon honey, optional

1 teaspoon Hot Curry Seasoning Blend
Directions
Preheat oven to 425°F. Line a medium baking sheet with parchment paper. Set aside.
In a medium bowl, combine all ingredients; toss to coat well.
Transfer to parchment paper; spread to a single layer. Bake 20-25 minutes or until carrots are fork tender and lightly caramelized.
