Tasty yet simple…this curry salmon can easily be made dairy, egg and/or gluten-free with a few simple swaps.
Ingredients

2 (5 ounce) salmon fillets

3 tablespoons mayonnaise or vegan mayonnaise

1½ teaspoons Hot Curry Seasoning Blend

2 tablespoons plain panko bread crumbs or gluten-free panko bread crumbs

2 tablespoons grated Pecorino or Parmesan cheese, optional
Directions
Preheat oven to 375°F. Line a medium rimmed baking sheet with parchment paper. Place salmon on baking sheet.
In small bowl, combine mayonnaise and Hot Curry Seasoning Blend. Spread all over salmon fillets.
In another small bowl, combine bread crumbs and cheese, if desired. Sprinkle over the tops of salmon fillets.
Bake until internal temperature reaches 145°F on an instant-read food thermometer, about 15-20 minutes.
