Tasty yet simple…this curry salmon can easily be made dairy, egg and/or gluten-free with a few simple swaps.
Ingredients
- 
2 (5 ounce) salmon fillets 
- 
3 tablespoons mayonnaise or vegan mayonnaise 
- 
            
1½ teaspoons Hot Curry Seasoning Blend 
- 
2 tablespoons plain panko bread crumbs or gluten-free panko bread crumbs 
- 
2 tablespoons grated Pecorino or Parmesan cheese, optional 
Directions
- Preheat oven to 375°F. Line a medium rimmed baking sheet with parchment paper. Place salmon on baking sheet. 
- In small bowl, combine mayonnaise and Hot Curry Seasoning Blend. Spread all over salmon fillets. 
- In another small bowl, combine bread crumbs and cheese, if desired. Sprinkle over the tops of salmon fillets. 
- Bake until internal temperature reaches 145°F on an instant-read food thermometer, about 15-20 minutes.
