These mashed potatoes are gluten-free, vegan and taste great…you’ll never know they’re actually good for you too!
Ingredients

1½ pounds red potatoes, cubed

5 tablespoons Extra Virgin Olive Oil, divided

1 tablespoon Garlic & Herb Seasoning Blend

¼ teaspoon sea salt, optional
Directions
Place potatoes in a large saucepan; cover with cold water. Bring to a boil over medium-high heat.
Meanwhile, in small microwave-safe bowl, combine ¼ cup Extra Virgin Olive Oil and Garlic & Herb Seasoning Blend. Microwave 45 seconds. Stir; set aside.
Once potatoes are boiling, reduce heat, cover and simmer 15-20 minutes or until potatoes are fork tender. Drain, reserving ½ cup cooking liquid.
Add olive oil mixture and salt, if desired, to drain potatoes. Mash, adding cooking liquid until desired creaminess is reached. Salt and pepper to taste. Serve drizzled with remaining 1 tablespoon Extra Virgin Olive Oil.
