This is a wonderful granola mix filled with nutritious
nuts and seeds. The honey adds a touch of natural sweetness. Perfect for yogurt
parfaits or just to eat by the handful. Use certified gluten-free oats for a
gluten-free granola.
Ingredients

1 cup old-fashioned rolled oats

¾ cup raw pecan halves & pieces

¾ cup raw almonds, roughly chopped
-
¾ cup raw pepitas (pumpkin seed kernels)

2 tablespoons ground flaxseeds

1 tablespoon black chia seeds
-
2-3 teaspoons All-Purpose Baking Seasoning Blend

¼ teaspoon sea salt, optional

¼ cup unrefined coconut oil
-
3 tablespoons honey
-
½ teaspoon pure vanilla extract
Directions
Preheat oven to 300°F. Line a large rimmed baking sheet with parchment paper; set aside. In large bowl, combine first 8 ingredients. Toss to combine.
In medium microwave-safe bowl, combine remaining 3 ingredients. Microwave on HIGH 30 seconds. Whisk to combine. Pour over oats and nuts. Toss to coat well.
Transfer to baking sheet. Spread into an even layer, pressing down and keeping everything touching. Bake until golden brown, about 35-40 minutes.
Remove from oven. Cool completely. Break into clusters and store in a large mason jar or air-tight storage container.
