This is a wonderful broth for protein, collagen and those who require a low sodium diet. The key to an easy broth is to save and freeze bones from roasted or rotisserie chickens, bone-in chicken breasts/thighs and chicken wings to have on hand. Chicken feet are an excellent way to add extra collagen to your broth but not required. Featuring Culinary Genie Salt-Free Umami Mushroom Seasoning Blend.
Ingredients

2 roasted chicken carcasses, skin and meat removed

4 chicken feet (paws)

18 cups water, divided

½ cup dry vermouth or white wine

3 celery ribs
-
1 large carrot, unpeeled
-
1 (2-inch) knob fresh turmeric root, unpeeled

10 garlic cloves, peeled or unpeeled

2 tablespoons Salt-Free Umami Mushrooms Seasoning Blend

1 tablespoon whole peppercorns

Cheesecloth, storage containers such as mason jars
Directions
In a 6-quart or larger slow cooker, combine carcasses and chicken feet. Pour enough water into cooker just to cover bones. Add vermouth.
Cut celery and carrot into large chunks and turmeric into slices. Add to cooker with remaining ingredients. Fill with remaining water.
Cover and set cooker to HIGH for 1 hour. Reduce to LOW and continue cooking for 11-12 hours.
Strain out bones and vegetables from broth. Place cheesecloth in a strainer and slowly strain broth through cheesecloth into a large bowl. Place strained bone broth into desired storage containers.
Allow to cool at room temperature until fat solidifies at the top. Gently remove fat from top with a spoon. Cover and refrigerate for up to 1 week or freeze.
