Navy Bean Soup

Ingredients

  • 1 (16 ounce) package dried navy beans or great northern beans

  • 2 cups chopped carrots

  • 2 cups chopped celery

  • 1½ cups chopped onion

  • 1 (2 pound) smoked pork/ham shank, ham bone or ham hock

  • 8 cups no salt added or low sodium chicken bone broth

  • 1 tablespoon Culinary Genie Salt-Free Garlic & Herb Seasoning Blend

  • 1 tablespoon Culinary Genie Salt-Free Mediterranean Herb Seasoning Blend

  • 1 tablespoon Culinary Genie Salt-Free Umami Mushroom Seasoning Blend

  • Grated pecorino or Parmesan cheese, optional for garnish

Directions

  1. Place beans in a colander and pick through to remove any debris. Rinse well and drain. Place in a 5-quart or larger slow cooker.

  2. Add remaining ingredients, except cheese, to slow cooker. Stir to combine. Cook on low 7-9 hours or until beans are tender.

  3. Remove ham hock; set aside to cool slightly. Meanwhile, using an immersion blender, blend soup just enough to create a creamy consistency, but leaving most of the beans whole.

  4. Pull meat from ham hock, removing any fat or cartilage.; discard. Add pulled meat back into soup.

  5. Serve garnished with cheese, if desired.
