Dry navy beans slow cooked with mirepoix (carrots, celery, onion), chicken bone broth, smoked ham and Culinary Genie Salt-Free Garlic & Herb, Mediterranean Herb and Umami Mushroom Seasoning Blends. So easy and so delicious…toss it all in a slow cooker, set it and forget it…8 hours later a hearty dinner is ready!
Ingredients
1 (16 ounce) package dried navy beans or great northern beans
2 cups chopped carrots
2 cups chopped celery
1½ cups chopped onion
1 (2 pound) smoked pork/ham shank, ham bone or ham hock
8 cups no salt added or low sodium chicken bone broth
1 tablespoon Culinary Genie Salt-Free Garlic & Herb Seasoning Blend
1 tablespoon Culinary Genie Salt-Free Mediterranean Herb Seasoning Blend
1 tablespoon Culinary Genie Salt-Free Umami Mushroom Seasoning Blend
Grated pecorino or Parmesan cheese, optional for garnish
Directions
Place beans in a colander and pick through to remove any debris. Rinse well and drain. Place in a 5-quart or larger slow cooker.
Add remaining ingredients, except cheese, to slow cooker. Stir to combine. Cook on low 7-9 hours or until beans are tender.
Remove ham hock; set aside to cool slightly. Meanwhile, using an immersion blender, blend soup just enough to create a creamy consistency, but leaving most of the beans whole.
Pull meat from ham hock, removing any fat or cartilage.; discard. Add pulled meat back into soup.
Serve garnished with cheese, if desired.
