The perfect quick and easy breakfast high in good fats and nutrients to keep you fueled all morning long, Omit the eggs or top with JUST eggs for a vegan option.
Ingredients

2 tablespoons Extra Virgin Olive Oil, divided

1 cup sliced fresh mushrooms of choice
-
½ cup sliced red onions
-
¾ teaspoon Peppery Sage Seasoning Blend

2 slices sourdough bread or bread of choice, toasted

1 ripe avocado, pitted and peeled

2 large eggs
Directions
In medium skillet, heat 1 tablespoon Extra Virgin Olive Oil over medium heat. Add mushrooms, onions and Peppery Sage Seasoning Blend. Sauté until lightly browned, about 3-4 minutes.
Meanwhile, drizzle toast with remaining 1 tablespoon Extra Virgin Olive Oil. Top with avocado and gently smash onto toast with a fork.
Prepare eggs as desired (poached, over-easy, scrambled). Top avocado toast with cooked mushrooms, onions and eggs. Salt and pepper as desired.
