Perfect for any Tex-Mex meal, this recipe is loaded
with flavor and so simple to make. Omit cheese for a vegan/dairy-free and even
lower sodium option (85 mg/serving).
Ingredients

4 fresh ears of corn, husked

¼ cup mayonnaise or vegan mayonnaise

¼ cup diced red onion
-
¼ cup chopped fresh cilantro

1½ teaspoons Fajita Seasoning Blend

½ cup crumbled queso fresco
Directions
Prepare grill to medium-high heat. Place corn on grill. Grill, turning occasionally, until lightly charred. Remove from grill; cool slightly.
Remove corn kernels from cobs. In a medium bowl, combine corn kernels, mayonnaise, onion, cilantro and Fajita Seasoning Blend. Mix until well combined.
Stir in cheese, if desired. Serve warm or at room temperature.
