A wonderful summer side salad, this Greek-inspired pasta salad is olive oil based and simply seasoned with Mediterranean Herb Seasoning Blend. Can easily be made gluten free, dairy-free or vegan.
Ingredients

8 ounces penne, rotini or short cut pasta of choice

1 (14 ounce) can artichoke hearts, drained and chopped

1 cup halved cherry tomatoes

1 cup chopped cucumbers
-
¾ cup feta cheese chunks
-
½ cup halved kalamata olives
-
⅓ cup thinly sliced red onion, slices cut into thirds

¼ cup Extra Virgin Olive Oil

1 tablespoon 20-Year Barrel-Aged Balsamic Vinegar of Modena, optional

3-4 teaspoons Mediterranean Herb Seasoning Blend
Directions
Prepare pasta according to package directions until just al dente. Rinse with cold water until cooled; drain well.
Meanwhile, in a large bowl, combine remaining ingredients.
Toss with pasta until well combined. Salt as desired.
Notes
· If you prefer to leave the balsamic out, increase the olive oil to 5 tablespoons.
· For a gluten-free option, substitute gluten-free penne or rotini pasta.
· For a dairy-free or vegan option, omit the cheese.
