Perfectly roasted, these potatoes are crispy on the outside, but tender on the inside. The perfect side dish for any meal.
Ingredients

1 pound yellow-flesh potatoes, cubed

1 tablespoon Extra Virgin Olive Oil

1½ teaspoons Mediterranean Herb Seasoning Blend

¼ teaspoon sea salt, optional
Directions
Preheat oven to 425°F. Line a large baking sheet with parchment paper.
In large bowl, combine all ingredients. Toss to coat. Spread over parchment.
Bake 20-25 minutes or until fork tender, stirring halfway through.
Notes
Tip: Potatoes can be air fryer or cooked on the grill.
