This bruschetta is the perfect tapa for summertime. Beef tenderloin seasoned with Culinary Genie Salt-Free Mediterranean Herb Seasoning Blend and grilled. Thinly sliced and served on grilled rustic bread topped with tomatoes, blue cheese and balsamic vinegar. Simple gluten and dairy-free options in the recipe.
Ingredients

¼ cup extra virgin olive oil, divided

1 tablespoon Culinary Genie Salt-Free Mediterranean Herb Seasoning Blend, divided

1 pound whole beef tenderloin
-
1 loaf rustic Italian bread, cut into 16 slices or bread slices of choice

2 medium tomatoes, thinly slices, slices cut in half

½ cup chiffonade (thinly sliced) fresh basil
-
4 ounces blue cheese crumbles or dairy-free blue cheese crumbles

2 tablespoons aged balsamic vinegar of Modena
Directions
In small bowl, combine 1 tablespoon olive oil and 2 teaspoons Culinary Genie Salt-Free Mediterranean Herb Seasoning Blend. Rub all over tenderloin. Refrigerate, covered, 2 hours or up to overnight.
Remove tenderloin from refrigerator. Let rest 30 minutes. Prepare grill to medium heat. Place tenderloin on grill. Grill, turning occasionally, until desired doneness is reached on an instant-read food thermometer (130°F for medium-rare; 140°F for medium), about 20-30 minutes.
Meanwhile, lightly brush both sides of bread slices with remaining 3 tablespoons olive oil. Place bread on grill and lightly toast both sides. Remove from grill and cut each slice in half; set aside.
Remove tenderloin from grill; season with salt as desired. Allow to rest 15 minutes. Thinly slice tenderloin.
To assemble, place tomato slices on bread; sprinkle tomatoes with remaining 1 teaspoon Culinary Genie Salt-Free Mediterranean Herb Seasoning Blend. Top with tenderloin slices, basil and blue cheese. Drizzle with balsamic vinegar.
