Grilled Italian Meatball Subs

Ingredients

  • 1 cup no salt added crushed tomatoes

  • 4 teaspoons Culinary Genie Salt-Free Zesty Italian & Pizza Seasoning Blend, divided

  • 1 pound ground meatloaf mixture (beef, pork)

  • ½ cup grated Parmesan cheese or vegan Parmesan cheese

  • ⅓ cup plain panko bread crumbs or gluten-free panko bread crumbs

  • 1 large egg, beaten

  • 4 metal skewers

  • 1 loaf French baguette bread or gluten-free baguette bread, cut into 4 sections

  • 2 tablespoons extra virgin olive oil

  • 4 slices provolone cheese or dairy-free cheese of choice

Directions

  1. Prepare grill to medium heat. To make marinara, in a microwave-safe bowl, combine tomatoes and 2 teaspoons Culinary Genie Salt-Free Zesty Italian & Pizza Seasoning Blend. Set aside.

  2. In a large bowl, combine meatloaf mixture, Parmesan cheese, bread crumbs, egg and remaining 2 teaspoons Culinary Genie Salt-Free Zesty Italian & Pizza Seasoning Blend. Form into 12 meatballs. Place 3 meatballs on each skewer.

  3. Place skewers on grill. Grill, turning occasionally, until internal temperature reaches 165°F on an instant-read food thermometer, about 10-12 minutes.

  4. Meanwhile, cut each section of bread in half, leaving one side attached. Brush with olive oil. Place on grill; grill until golden brown.

  5. Microwave marinara until heated through, about 30-60 seconds. Remove meatballs from skewers and place in bread. Top with warm marinara and cheese. If desired, place under broiler until cheese is melted and golden brown.
