This salsa screams summertime. Perfect for any occasion, easy to make and loaded with fresh flavors. Featuring Culinary Genie Salt-Free Fajita and Garlic & Herb Seasoning Blends. Omit cheese for a dairy-free option.
Ingredients

¼ cup fresh squeezed lime juice (about 2 large limes), divided

1 teaspoon lime zest

2 tablespoons extra virgin olive oil

1½ teaspoons Culinary Genie Salt-Free Fajita Seasoning Blend

1 pound halibut fillets, skin removed
-
1 cup chopped fresh mango
-
24 grape tomatoes, quartered or 1 cup chopped tomatoes
-
1 ripe avocado, pitted, peeled and chopped
-
½ cup crumbed queso fresco cheese
-
¼ cup chopped fresh cilantro
-
½ teaspoon Culinary Genie Salt-Free Garlic & Herb Seasoning Blend

Tortilla chips or dippers of choice
Directions
In a medium storage container, combine 2 tablespoons lime juice, lime zest, olive oil and Culinary Genie Salt-Free Fajita Seasoning Blend; salt as desired. Add halibut. Seal well and gently toss to coat. Marinade 30 minutes.
Prepare grill to medium heat. Remove halibut from marinade; discard marinade. Place halibut on grill. Grill, turning once, until internal temperature reaches 145°F on an instant-read food thermometer, about 10 minutes per inch of thickness.
Remove halibut from grill. Set aside to cool completely.
Meanwhile, in large bowl, combine mangos, tomatoes, avocado, cheese, cilantro, Culinary Genie Salt-Free Garlic & Herb Seasoning Blend and remaining 2 tablespoons lime juice. Toss to coat well. Salt as desired.
Flake fish into salsa and gently fold together. Serve with tortilla chips or dippers of choice.
