Chicken marinated in Citrus Pepper Vinaigrette and grilled. Served over power greens with cucumbers, blueberries, walnuts and goat cheese.
Ingredients
8 ounces boneless, skinless chicken breasts, pounded to an even thickness
1 recipe (½ cup) prepared Citrus Pepper Vinaigrette, divided
5 ounces mixed baby power greens (spinach, kale, Swiss chard) or greens of choice
1 mini cucumber, sliced
½ cup blueberries
½ cup crumbled goat cheese, optional
¼ cup chopped walnuts, toasted
2 tablespoons sliced red onion
Directions
In a storage container, combine chicken and ¼ cup Citrus Pepper Vinaigrette. Salt as desired. Cover and toss to coat well. Refrigerate 2 hours or up to overnight.
Prepare grill to medium heat. Remove chicken from marinade; discard marinade. Place chicken on grill. Grill, turning once, until internal temperature reaches 165°F on an instant-read food thermometer, about 10-12 minutes. Remove chicken from grill. Let stand 5-10 minutes; slice.
Meanwhile, divide remaining ingredients between 2 large salad bowls or dinner plates. Top with sliced chicken and drizzle with remaining ¼ cup Citrus Pepper Vinaigrette.
