This is a wonderful summer dinner salad. Simple to make and a great salad idea for all those green beans in the garden. Featuring Culinary Genie Salt-Free Citrus Pepper Seasoning Blend. Can easily be made gluten and/or dairy-free with a couple simple swaps listed in the recipe.
Ingredients

¼ cup extra virgin olive oil

2 tablespoons Culinary Genie Salt-Free Citrus Pepper Seasoning Blend

Juice of 1 lemon (about 2 tablespoons)

1 teaspoon no salt added stone ground mustard

1 pound boneless, skinless chicken breasts, pounded to an even thickness

8 ounces gemelli pasta, short cut pasta or gluten-free pasta of choice

8 ounces fresh green beans, cut in half
-
½ cup mayonnaise or vegan mayonnaise
-
½ red bell pepper, diced
-
⅔ cup shredded Asiago cheese or dairy-free Parmesan cheese
-
½ cup julienned radishes
-
¼ cup sliced green onions
-
¼ cup pine nuts, toasted
Directions
Prepare grill to medium heat. In a small bowl, whisk together, oil, Culinary Genie Salt-Free Citrus Pepper Seasoning Blend, lemon juice and mustard; salt as desired. Set aside.
Using a fork, pierce chicken all over. Rub with 3 tablespoons of the citrus pepper mixture. Let stand 10 minutes.
Place chicken on grill. Grill, turning once, until internal temperature reaches 165°F on an instant-read food thermometer, about 10-12 minutes. Remove from grill and let cool. Chop.
Meanwhile, in a large pot, prepare pasta according to package directions to al dente. Add green beans to pasta the last 2-3 minutes to blanch to a crisp-tender doneness. Drain and rinse pasta and beans with cold water until completely cooled. Drain well.
In large bowl, whisk together mayonnaise and remaining citrus pepper mixture. Add pasta and beans, chopped chicken, bell pepper, cheese, radishes and green onions to bowl. Toss to coat well. Salt and pepper as desired. Refrigerate 30 minutes or up to 2 hours.
Toss with toasted pine nuts just before serving.
