These fajitas are perfect for marinating ahead and throwing on the grill when you get home from work for a quick and easy dinner. They can easily be made as grilled fajita burritos as well. Featuring Culinary Genie Salt-Free Fajita Seasoning Blend. These fajitas are dairy-free and can easily be made gluten-free using gluten-free tortillas.

Grilled Beef Fajitas

Ingredients

  • ¼ cup avocado oil

  • ¼ cup tequila or water

  • 2 tablespoons fresh squeezed lime juice (about 1 large lime)

  • 1 tablespoon Culinary Genie Salt-Free Fajita Seasoning Blend

  • 1 pound boneless beef sirloin steak

  • 1 red bell pepper, quartered and seeds removed

  • 1 poblano chile pepper or green bell pepper, quartered and seeds removed

  • 1 medium onion, sliced ¼-inch thick

  • 8 reduced carb 4.5-inch street taco flour tortillas (such as La Banderita zero net carb counter) or tortillas of choice

  • Toppings such as shredded lettuce, chopped tomatoes, shredded cheese, sour cream, pico de gallo, guacamole, optional

Directions

  1. In a large storage container, combine oil, tequila, lime juice and Culinary Genie Salt-Free Fajita Seasoning Blend; salt as desired. Add steak, peppers and onions. Seal well and toss to coat. Refrigerate 2 hours or up to overnight.

  2. Prepare grill to medium heat. Remove steak and vegetables from marinade and place on grill; discard marinade. Grill steak, turning once, 8-16 minutes (depending on thickness) or until desired doneness is reached (145°F for medium-rare; 160°F for medium). Grill peppers and onions until desired doneness.

  3. Remove from grill and allow steak to rest 5-10 minutes. Meanwhile, place tortillas on grill to warm.

  4. Thinly slice steak; slice peppers and onions. Serve in grilled tortillas with desired toppings.
