No canned enchilada sauce loaded with sodium needed
for these enchiladas. Simply mix Taco Seasoning Blend into no salt added
crushed tomatoes and you’ve got sauce!
Ingredients

1 (28 ounce) can no salt added crushed tomatoes

4 tablespoons Taco Seasoning Blend

½ teaspoon sea salt, divided, optional

1 pound 85% lean ground beef

1 tablespoon Garlic & Herb Seasoning
-
10 (6-inch) corn tortillas or tortillas of choice

1½ cups shredded Cheddar cheese or vegan cheese of choice, divided

Toppings such as sour cream, onions, tomatoes, black olives, lettuce
Directions
Preheat oven to 375°F. In small mixing bowl, combine tomatoes, Taco Seasoning Blend and ¼ teaspoon salt. Whisk until well combined. Set aside.
In large skillet over medium-high heat, combine ground beef, Garlic & Herb Seasoning and remaining ¼ teaspoon salt. Cook and crumble until no longer pink; drain off liquid. Stir in 1 cup sauce. Remove from heat.
Spread 1 cup sauce over bottom of a greased 13x9-inch baking dish. Divide meat mixture and ¾ cup cheese among tortillas. Roll up and place seam-side-down in baking dish. Spread with remaining sauce and sprinkle with remaining ¾ cup cheese.
Bake 25 minutes or until cheese is melted and bubbly. Serve with desired toppings.
