This simple salad is perfect for lunch. Perfect for
using up leftover cooked chicken. Use gluten-free pasta of choice for
gluten-free option.
Ingredients
- 
¾ cup rotini pasta or short cut pasta of choice 
- 
2 teaspoons water 
- 
            
1 teaspoon Hot Curry Seasoning Blend 
- 
3 tablespoons mayonnaise or vegan mayonnaise 
- 
¾ cup diced cooked chicken breasts 
- 
1 small apple, chopped (about ¾ cup) 
- 
1 tablespoon sliced celery 
- 
1 tablespoon chopped onion 
- 
1 tablespoon currants or raisins 
Directions
- Prepare pasta according to package directions until just al dente. Rinse with cold water until cooled; drain well. 
- Meanwhile, in small microwave-safe bowl, combine water and Hot Curry Seasoning Blend. Microwave on HIGH 15 seconds. Stir; let cool. 
- In medium bowl, combine mayonnaise and cooled curry seasoning; mix well. Add remaining ingredients. Stir to combine. Stir in cooled pasta. Toss to coat well. Salt as desired.
