Easily make this chicken dairy- and egg-free by omitting
the cheese, increasing bread crumbs to 1½ cups and using a vegan mayonnaise
Ingredients

4 tablespoons Extra Virgin Olive Oil, divided

4 teaspoons Garlic & Herb Seasoning Blend, divided

2 tablespoons no salt added stoneground mustard, divided
-
1 cup gluten-free plain panko bread crumbs

½ cup grated Pecorino Romano cheese

1½ teaspoons Blackened Seasoning Blend, divided

1 pound boneless, skinless chicken breasts, cut into 4 pieces, pounded to ¼-inch thick

1 teaspoon water

⅓ cup mayonnaise
Directions
In small microwave-safe bowl, combine 2 tablespoons Extra Virgin Olive Oil and 1 teaspoon Garlic & Herb Seasoning Blend. Microwave on HIGH 30 seconds. Whisk in 1 tablespoon mustard. Set aside.
In a shallow dish, combine bread crumbs, cheese, 2 teaspoons Garlic & Herb Seasoning Blend and ½ teaspoon Blackened Seasoning Blend.
Season chicken breasts with remaining 1 teaspoon Blackened Seasoning Blend. Brush both sides with mustard sauce and coat with breading, pressing it into the chicken. Set aside.
In small microwave-safe bowl, combine remaining 1 teaspoon Garlic & Herb Seasoning Blend and water. Microwave on HIGH 15 seconds; let cool. Whisk in mayonnaise and remaining 1 tablespoon mustard. Set aside.
In large skillet, heat remaining 2 tablespoons Extra Virgin Olive Oil over medium-high heat. Add chicken. Cook until golden brown. Turn over and continue cooking until golden brown and internal temperature reaches 165°F on an instant-read food thermometer, about 6-8 minutes. Slice and serve with sauce for dipping.

Tip: Prepare through step 3. Individually wrap each breast
in parchment paper. Place in a freezer-safe storage container. Thaw before
continuing with step 4.
