Inspired by the social media craze “Marry Me Chicken”,
we’ve created a gluten-free version using our Mediterranean Herb Seasoning
Blend for even more flavor than the original. The perfect dish for
entertaining or a weeknight meal.
Ingredients
-
¼ cup tapioca starch (flour), cornstarch or all-purpose flour
-
1½ teaspoons Everyday Seasoning Blend, divided
-
1 pound boneless, skinless chicken breasts, cut into 4 pieces, pounded ¼-inch thick
-
2 tablespoons Extra Virgin Olive Oil
-
1 tablespoon butter
-
2 teaspoons Garlic & Herb Seasoning Blend
-
½ cup no salt added chicken bone broth or stock
-
¾ cup heavy whipping cream
-
½ cup grated Pecorino Romano cheese or Parmesan cheese
-
2 teaspoons Mediterranean Herb Seasoning Blend
-
¼ cup sun-dried tomatoes in oil, chopped (about 7 pieces)
-
Fresh basil leaves, optional
Directions
In shallow dish, combine tapioca starch, 1 teaspoon Everyday Seasoning Blend and salt. Lightly season chicken with remaining ½ teaspoon Everyday Seasoning Blend; salt as desired. Dredge in tapioca starch. Set aside.
In large skillet, heat Extra Virgin Olive Oil over medium heat. When hot, add butter. Once butter is melted and sizzling, carefully add chicken to skillet. Cook, undisturbed, until nicely browned, about 7-8 minutes. Turn over and continue cooking, undisturbed, until nicely browned and internal temperature reaches 155°F on an instant-read food thermometer, about 4-5 minutes. Remove chicken from skillet and keep warm.
Add Garlic & Herb Seasoning Blend to skillet; sauté 15 seconds. Add chicken broth and deglaze pan, scraping any bits off the bottom of the skillet. Simmer 2 minutes.
Stir cream, cheese and Mediterranean Herb Seasoning Blend into skillet. Bring to a simmer. Reduce heat and let simmer until sauce starts to thickened, about 2-3 minutes.
Stir in tomatoes and add chicken back into skillet covering in sauce. Continue simmering, occasionally spooning sauce over chicken until internal temperature reaches 165°F on an instant-read food thermometer and sauce is thickened, about 4-5 minutes. Serve garnished with basil, if desired.
