Potatoes baked in the air fryer and turned into classic, crispy ooey gooey potato skins dolloped with ranch flavored sour cream. Featuring Culinary Genie Salt-Free Everyday and Garden Herbs Seasoning Blends.
Ingredients
8 small russet potatoes, scrubbed
2 tablespoons extra virgin olive oil, divided
2 teaspoons Culinary Genie Salt-Free Everyday Seasoning Blend, divided
½ cup sour cream
1 tablespoon Culinary Genie Salt-Free Garden Herbs Seasoning Blend
2 cups shredded Cheddar Jack cheese
8 reduced sodium uncured bacon slices, cooked and crumbled
Chopped chives or green onions, optional
Directions
Pierce cleaned potatoes with a fork in several spots. Rub potatoes with 1 tablespoon olive oil and sprinkle with 1 teaspoon Salt-Free Everyday Seasoning Blend; salt as desired.
Place potatoes in air fryer. Air fry at 400°F until potatoes are fork tender, about 40 minutes.
Meanwhile, in small bowl, combine sour cream and Salt-Free Garden Herbs Seasoning Blend. Mix until well combined. Salt as desired. Cover and refrigerate until ready to serve.
Remove potatoes from fryer; cool enough to touch. Cut potatoes in half and scoop out flesh (discard or reserve flesh for another use). Brush inside of potato halves with remaining 1 tablespoon olive oil and sprinkle with remaining 1 teaspoon Salt-Free Everyday Seasoning Blend; salt as desired.
Place potato shells, skin side down, in air fryer. Air fry in batches, if needed, at 400°F until flesh is browned, about 3-4 minutes. Remove and top with cheese and bacon. Continue air frying until cheese is melted and bubbly.
Serve garnished with chives and serve with ranch sour cream.
