This roast chicken is the perfect option for a lower sodium lemon pepper rotisserie chicken. Featuring Culinary Genie Salt-Free Citrus Pepper Seasoning Blend. Placing lemon wedges in the cavity infuses lemon flavor from the inside while roasting.

Citrus Pepper Roasted Chicken

Ingredients

  • 1 (4-5 pound) whole chicken, cleaned and dried

  • 2 tablespoons Salt-Free Citrus Pepper Seasoning Blend, divided

  • ½ teaspoon sea salt, optional

  • 1 lemon, quartered

  • 1-2 tablespoons avocado or olive oil

Directions

  1. Preheat oven to 425°F. Line a medium rimmed baking sheet with aluminum foil. Place a roasting or baking rack in pan. Set aside.

  2. In a small bowl, combine 1 tablespoon Salt-Free Citrus Pepper Seasoning Blend and salt, if desired. Using fingers gently separate skin from breasts. Rub half the seasoning with salt between breasts and skin. Rub the remaining in the cavity of the chicken. Place lemon sections inside cavity.

  3. Rub or spritz the outside of the chicken with oil and sprinkle with remaining Salt-Free Citrus Pepper Seasoning Blend. Place on baking rack breast side up.

  4. Bake 30 minutes. Rotate pan in oven. Reduce heat to 375°F. Bake until internal temperature of chicken reaches a minimum of 165°F on an instant-read food thermometer (we recommend 180°F in the thigh for the best eating experience), about 45 minutes.

  5. Remove from oven and let stand 10 minutes before serving.
