Chocolate Chip Oatmeal Cookies are soft, chewy cookies with rich dark chocolate, hearty oats and warm cinnamon flavor. Made with Culinary Genie Salt-Free Cinnamon & Orange Seasoning Blend, these cookies combine almond flour, sprouted rolled oats and protein powder for a delicious homemade treat. They're perfect for an afternoon snack, lunchboxes or enjoying with a cup of coffee or tea.
Ingredients

1¾ cups almond flour

2 tablespoons (scoops) plain or vanilla protein powder

1½ teaspoons Culinary Genie Salt-Free Cinnamon & Orange Seasoning Blend

¾ teaspoon low sodium baking powder

¾ teaspoon baking soda

¼ teaspoon sea salt

½ cup solid unrefined cold-pressed virgin coconut oil (do not melt)

¾ cup allulose + monk fruit sweetener (such as Whole Earth)

2 large eggs or 6 tablespoons plant-based liquid egg substitute (such as JUST Egg)

1 teaspoon pure vanilla extract

1½ cups gluten-free sprouted rolled oats (such as One Degree Organics)

¾ cup 72% cacao dark chocolate chips or vegan chocolate chips
Directions
Preheat oven to 375°F. In medium bowl, combine almond flour, protein powder, Culinary Genie Salt-Free Cinnamon & Orange Seasoning Blend, baking powder, baking soda and salt. Whisk to combined well. Set aside.
In large mixing bowl, combine solid coconut oil and sweetener. Using an electric hand mixer, beat until creamed, soft and fluffy, about 1-2 minutes. Add eggs and vanilla; beat until well combined, light and fluffy, scrapping bowl as needed.
Slowly add flour mixture while mixing until fully incorporated. Add oats and chocolate chips; continue mixing until just combined.
Using a cookie scoop, place dough on a parchment-lined baking sheet 2-inches apart. Bake until golden brown, about 10-12 minutes.
Remove from oven and allow to cool on baking sheet 1 minute. Carefully remove to cooling rack. Repeat with remaining dough.
