Chicken sautéed with assorted vegetables and simmered in a curry coconut sauce. Serve over cooked jasmine rice for the perfect dinner ready in just 30 minutes.
Ingredients

1 tablespoon Extra Virgin Olive Oil

½ cup thinly sliced carrots

½ cup chopped onion
-
½ cup sliced mini sweet peppers
-
½ teaspoon Garlic & Herb Seasoning Blend

¼ teaspoon sea salt, optional

¾ pound boneless, skinless chicken breasts, thinly sliced

1½ cups sliced fresh button mushrooms
-
1½ tablespoons Hot Curry Seasoning Blend, divided
-
1½ cups chopped frozen broccoli
-
1 (13.5 ounce) can coconut milk

Cooked jasmine rice, optional
Directions
In large saucepan, heat Extra Virgin Olive Oil over medium heat. Add carrots, onions, peppers, Garlic & Herb Seasoning Blend and salt, if desired. Sauté 5-6 minutes.
Stir in chicken, mushrooms and 1 tablespoon Hot Curry Seasoning Blend. Sauté 2-3 minutes. Stir in broccoli; sauté 2-3 minutes.
Add coconut milk and remaining 1½ teaspoons Hot Curry Seasoning Blend. Simmer 3-4 minutes.
Serve over rice, if desired.
