An indulgent bowl of creamy, cheesy goodness. Our version of this cheeseburger soup is gluten-free by using heavy cream to give it body without using flour. It can also be made dairy-free with a couple simple swaps. Featuring Culinary Genie Salt-Free Umami Mushroom Seasoning Blend and Culinary Genie Salt-Free Garden Herbs Seasoning Blend.
Ingredients

1 pound 85% lean ground beef

½ cup diced carrots

½ cup diced onions
-
½ cup diced celery

1 tablespoon Salt-Free Umami Mushroom Seasoning Blend

1 pound russet potatoes, peeled and diced

6 cups reduced sodium or no salt added chicken bone broth

2 cups shredded Cheddar cheese or dairy-free Cheddar cheese

1 cup heavy whipping cream or canned full-fat coconut milk

1½ tablespoons Salt-Free Garden Herbs Seasoning Blend

Bacon crumbles, shredded Cheddar cheese, chopped parsley, optional
Directions
In a Dutch oven or large saucepan over medium-high heat, combine ground beef, carrots, onions, celery and Salt-Free Umami Mushroom Seasoning Blend; salt as desired. Cook and crumble until beef is no longer pink, about 5-6 minutes.
Stir in potatoes and broth; salt as desired. Bring to a simmer; simmer until potatoes are tender, about 15-20 minutes.
Add cheese, cream and Salt-Free Garden Herbs Seasoning Blend. Continue simmering until cheese is melted, stirring frequently, about 5 minutes.
Serve garnished with bacon, cheese and parsley, if desired.
