This reduced sodium chicken has just the right amount of Cajun spice for the perfect roast chicken without all the salt. Serve as a main dish, or use in salads, pasta or rice dishes. Featuring Culinary Genie Salt-Free Cajun Creole Seasoning Blend.
Ingredients

1 (4-5 pound) whole chicken, cleaned and dried

2 tablespoons Salt-Free Cajun Creole Seasoning Blend, divided

½ teaspoon sea salt, optional

1-2 tablespoons avocado oil
Directions
Preheat oven to 425°F. Line a medium rimmed baking sheet with aluminum foil. Place a roasting or baking rack in pan. Set aside.
In a small bowl, combine 1 tablespoon Salt-Free Cajun Creole Seasoning Blend and salt, if desired. Using fingers gently separate skin from breasts, but not removing. Rub half the seasoning with salt between breasts and skin. Rub the remaining in the cavity of the chicken.
Rub or spritz the outside of the chicken with avocado oil and sprinkle with remaining Salt-Free Cajun Creole Seasoning Blend. Place on baking rack breast side up.
Bake 30 minutes. Rotate pan in oven. Reduce heat to 375°F. Bake until internal temperature of chicken reaches a minimum of 165°F on an instant-read food thermometer (we recommend 180°F in the thigh for the best eating experience), about 45 minutes.
Remove from oven and let stand 10 minutes before serving.
