For when a warm bowl of creamy broccoli soup is just the thing…this soup is quick, simple and oh, so tasty and velvety. Featuring Culinary Genie Salt-Free Garlic & Herb and Umami Mushroom Seasoning Blends. Can easily be made gluten-free with a simple swap in the recipe.
Ingredients

2 tablespoons butter

½ medium red onion, chopped

1 celery stalk, chopped

1 cup shredded carrots (about 2 medium)

2 teaspoons Culinary Genie Salt-Free Garlic & Herb Seasoning Blend

¼ cup all-purpose flour (we used Sunrise Flour Mill organic heritage white) or all-purpose gluten-free flour

4 cups No Salt Added Chicken Bone Broth (recipe) or vegetable broth

3 cups chopped fresh broccoli

1 tablespoon Culinary Genie Salt-Free Umami Mushroom Seasoning Blend

2 cups heavy whipping cream
-
2 cups shredded sharp Cheddar cheese

Garnishes such as bacon crumbles, shredded cheese, optional
Directions
In Dutch oven or large saucepan, melt butter over medium-high heat. Add onions, celery and carrots. Sauté 3 minutes. Add Culinary Genie Salt-Free Garlic & Herb Seasoning Blend; continue sautéing 2 minutes.
Stir in flour. Cook 1 minute. Whisk in broth. Bring to a boil. Add broccoli and Culinary Genie Salt-Free Umami Mushroom Seasoning Blend. Reduce heat and simmer until broccoli is tender, stirring occasionally, about 10 minutes.
If desired, use an immersion blender to lightly blend to smoother consistency (optional). Stir in cream and cheese. Cook, stirring frequently, until cheese is melted and smooth and soup has thickened and is heated through. Serve topped with bacon and shredded cheese, if desired.
