Ready in just minutes, these scallops are perfect for a dinner party or a simple weeknight meal.
Ingredients

1 pound sea scallops, thawed if frozen

3-4 teaspoons Blackened Seasoning Blend

3 tablespoons Extra Virgin Olive Oil
Directions
Remove the side muscle from scallops (it’s a fibrous rectangular piece of tissue on the side of the scallop); pat scallops dry with clean paper towels.
Generously coat scallops with Blackened Seasoning Blend. Set aside.
Heat a large skillet over medium-high heat. When hot, add Extra Virgin Olive Oil. Carefully place scallops in hot oil. Cook, undisturbed, until nicely browned, about 1-2 minutes.
Carefully turn over and continue cooking, undisturbed, until internal temperature reaches 145°F on an instant-read food thermometer and are nicely browned and opaque in color, about 2-3 minutes. Remove from skillet. Salt as desired.
