Beef braised to tender perfection with mushrooms and barley, perfect for a cozy weekend dinner. Loaded with umami flavor, this recipe features Culinary Genie Salt-Free Umami Mushroom Seasoning Blend, Culinary Genie Salt-Free Everyday Seasoning Blend and Culinary Genie Salt-Free Garlic & Herb Seasoning Blend.
Ingredients

2 tablespoons extra virgin olive oil, divided

1 pound beef stew meat cubes

1 tablespoon Salt-Free Everyday Seasoning Blend

1 cup chopped carrots
-
1 cup chopped celery
-
½ cup chopped onion
-
1 tablespoon Salt-Free Garlic & Herb Seasoning Blend

1 (3.5 ounce) package shiitake mushrooms, stems removed, sliced

2 cups sliced baby bella mushrooms

2 tablespoons Salt-Free Umami Mushroom Seasoning Blend

4 cups no salt added or reduced sodium beef bone broth

½ cup pearled barley
Directions
In Dutch oven or large saucepan, heat 1 tablespoon oil over medium-high heat. Add beef and Salt-Free Everyday Seasoning Blend; salt as desired. Cook, stirring occasionally, until browned on all sides. Remove from pan.
Add remaining 1 tablespoon oil to pan; add carrots, celery, onions and Salt-Free Garlic & Herb Seasoning Blend; salt as desired. Sauté until onions are softened, about 3-5 minutes. Add mushrooms and Salt-Free Umami Mushroom Seasoning Blend. Sauté until mushrooms are softened.
Add beef and bone broth; bring to a boil. Reduce heat and simmer 30 minutes. Stir in barley. Continue simmering until beef and barley are tender, about 45-60 minutes.
