These vegetarian burritos are easy to make, loaded with fiber and lower in sodium than your classic tex-mex burritos. These can be made ahead and frozen for a quick on-the-go reheat meal. Featuring Culinary Genie Salt-Free Taco Seasoning Blend. Can easily be made dairy-free and/or gluten-free.

Ingredients
1 (15.4 ounce) can reduced sodium vegetarian refried beans (such as Amy’s)
1½ cups cooked brown rice
1½ cups shredded Colby jack cheese or dairy-free cheese of choice
1 cup frozen corn kernels
½ cup pico de gallo
½ cup sour cream or dairy-free sour cream
2½ tablespoons Culinary Genie Salt-Free Taco Seasoning Blend
8 reduced carb 8-inch flour tortillas (such as La Banderita zero net carb counter) or tortillas of choice
Chopped tomatoes, guacamole, sour cream, optional
Directions
In large saucepan over medium heat, combine beans, rice, cheese, corn, pico de gallo, sour cream and Culinary Genie Salt-Free Taco Seasoning Blend.
Cook, stirring occasionally, until heated through.
Divide mixture among tortillas. Top with tomatoes, guacamole and sour cream, if desired. Fold in sides and roll-up burrito style. Cut in half and serve.
