These vegetarian burritos are easy to make, loaded with fiber and lower in sodium than your classic tex-mex burritos. These can be made ahead and frozen for a quick on-the-go reheat meal. Featuring Culinary Genie Salt-Free Taco Seasoning Blend. Can easily be made dairy-free and/or gluten-free.

Bean, Rice & Cheese Burritos

Ingredients

  • 1 (15.4 ounce) can reduced sodium vegetarian refried beans (such as Amy’s)

  • 1½ cups cooked brown rice

  • 1½ cups shredded Colby jack cheese or dairy-free cheese of choice

  • 1 cup frozen corn kernels

  • ½ cup pico de gallo

  • ½ cup sour cream or dairy-free sour cream

  • 2½ tablespoons Culinary Genie Salt-Free Taco Seasoning Blend

  • 8 reduced carb 8-inch flour tortillas (such as La Banderita zero net carb counter) or tortillas of choice

  • Chopped tomatoes, guacamole, sour cream, optional

Directions

  1. In large saucepan over medium heat, combine beans, rice, cheese, corn, pico de gallo, sour cream and Culinary Genie Salt-Free Taco Seasoning Blend.

  2. Cook, stirring occasionally, until heated through.

  3. Divide mixture among tortillas. Top with tomatoes, guacamole and sour cream, if desired. Fold in sides and roll-up burrito style. Cut in half and serve.
