Chicken breasts stuffed with an onion and chive cream cheese mixture, wrapped in uncured bacon and baked…super easy to make with ooey gooey tasty goodness. Can easily be made dairy-free. Featuring Culinary Genie Salt-Free Onion & Chive Dip Mix.
Ingredients

6 boneless, skinless chicken breasts (about 2 pounds)

1 (8 ounce) package cream cheese or dairy-free cream cheese, softened

1 (0.97 ounce) packet Culinary Genie Salt-Free Onion & Chive Dip Mix

12 reduced sodium uncured bacon slices (about ¾ pound)
Directions
Preheat oven to 400°F. Line a rimmed baking sheet with aluminum foil and place a baking/cooling rack over foil. Set aside.
Cut a large slit in the top of each chicken breast, cutting to the left and right to create a stuffing pocket. Salt and pepper chicken breasts as desired. Set aside.
In medium bowl, combine cream cheese and Salt-Free Onion & Chive Dip Mix. Using an electric hand mixer, beat until well combined, light and fluffy. Salt and pepper as desired.
Stuff cheese mixture into pockets in chicken. Wrap each breast with 2 slices of bacon. Place chicken bundles on baking sheet rack.
Bake until internal temperature of chicken (not cheese) reaches 165°F on an instant-read food thermometer, about 35-40 minutes. If needed, turn oven to broil on HIGH to allow bacon to reach desired crispiness, about 2-3 minutes.
Notes
Tip: Chicken can be prepared through step 4 and refrigerated up to 1 day ahead or frozen in a freezer-safe storage container. Thaw before baking.
