With a hint of heat from our blackened seasoning, this
quiche is perfect for breakfast, lunch or dinner.
Ingredients

6 low sodium uncured bacon slices, chopped
-
½ cup chopped onion
-
1 cup frozen chopped broccoli

¾ teaspoon Blackened Seasoning Blend, divided

4 large eggs
-
1 cup half & half
-
¼ cup grated Parmesan cheese
-
1 (9-inch) frozen gluten-free pie shell (keep frozen)

1 cup shredded Cheddar cheese
Directions
Preheat oven to 375°F. In medium skillet over medium-high heat, cook bacon until crispy. Remove to clean paper towels. Remove all but 1 tablespoon bacon drippings from skillet.
Add onions to skillet. Sauté 2-3 minutes. Add broccoli and ¼ teaspoon Blackened Seasoning Blend. Sauté 2-3 minutes or until onions are softened. Remove from heat. Set aside.
In large bowl, whisk together, eggs, half & half, Parmesan cheese and remaining ½ teaspoon Blackened Seasoning Blend.
Place pie shell on a baking sheet. Sprinkle ¼ cup Cheddar cheese over the bottom of shell. Top with broccoli mixture, bacon and remaining ¾ cup Cheddar cheese. Gently pour egg mixture over filling.
Bake 40-50 minutes or until knife inserted in center comes out clean. Remove from oven and allow to set for 10 minutes before serving.
