A fun twist on the classic Eggplant Parmesan, these are the perfect bite-sized appetizer for a party. Featuring Culinary Genie Salt-Free Garlic & Herb and Zesty Italian & Pizza Seasoning Blends.
Ingredients

6 baby eggplants (about 2-3 inches in length)

3 tablespoons extra virgin olive oil, divided

1 tablespoon Culinary Genie Salt-Free Garlic & Herb Seasoning Blend, divided

1 cup 2% milkfat cottage cheese
-
¾ cup grated pecorino or Parmesan cheese, divided
-
1 tablespoon Culinary Genie Salt-Free Zesty Italian & Pizza Seasoning Blend, divided
-
½ cup plain panko bread crumbs or gluten-free panko bread crumbs
-
½ cup canned fire-roasted diced tomatoes, drained
-
½ cup roasted red peppers, drained
-
¼ cup half & half
Directions
Preheat oven to 425°F. Cut baby eggplants in half from stem to end. Scoop out seeds. Place skin side down on a parchment-lined rimmed baking sheet.
Brush with 1 tablespoon olive oil and sprinkle with 1 teaspoon Salt-Free Garlic & Herb Seasoning Blend. Bake 10 minutes.
Meanwhile, in small bowl*, combine cottage cheese, ¼ cup pecorino cheese, egg, 2 teaspoons Salt-Free Zesty Italian & Pizza Seasoning Blend and 1 teaspoon Salt-Free Garlic & Herb Seasoning Blend. Using an immersion blender, blend until smooth. Dollop into eggplant shells.
In small bowl, combine bread crumbs, remaining ¼ cup pecorino cheese, remaining 2 tablespoons olive oil and ½ teaspoon Salt-Free Garlic & Herb Seasoning Blend. Toss to combine. Sprinkle over eggplants. Bake 20 minutes or until bubbly and golden brown.
Meanwhile, in microwave-safe bowl*, combine tomatoes, red peppers, half & half, remaining ¼ cup pecorino cheese, remaining 1 teaspoon Salt-Free Zesty Italian & Pizza Seasoning Blend and remaining ½ teaspoon Salt-Free Garlic & Herb Seasoning Blend. Using an immersion blender, blend until smooth. Transfer to microwave and loosely cover. Microwave on HIGH 1-2 minutes or until heated through, stirring occasionally.
Serve drizzled with sauce.
Notes
Note: A blender can be used for steps 3 and 5 if an immersion blender is unavailable.
