Hot Curry Pork Tenderloin

Pork tenderloin marinated with Hot Curry Seasoning Blend and coconut milk. Roasted and served with coconut curry sauce.
Ingredients
1 (13.5 ounce) can light coconut milk
1½ tablespoons Hot Curry Seasoning Blend
¼ teaspoon sea salt, optional
1 (1 pound) pork tenderloin
Directions
In a storage container with tight fitting lid, combine coconut milk, Hot Curry Seasoning Blend and salt, if desired.
Pierce pork all over with fork. Salt and pepper as desired. Place in container with marinade. Seal well, gently toss to coat. Refrigerate 4 hours or up to overnight.
Preheat oven to 425°F. Line a rimmed baking sheet with aluminum foil. Place a baking rack on pan. Remove pork from marinade (reserve marinade). Place pork on rack. Bake until internal temperature reaches 150°F on an instant-read food thermometer, about 35-40 minutes.
Meanwhile, in small saucepan over medium heat, bring reserved marinade to a boil. Boil 1 minute. Reduce heat to low and simmer 5 minutes. Set aside; keep warm.
Remove pork from oven. Let stand 5-10 minutes. Slice. Serve drizzled with coconut curry sauce.
