Who needs eggs or dairy for breakfast when you've got these hearty hash browns loaded with veggies and flavor. Feel free to swap out any veggies with your favorites or whatever you've got on hand.
Ingredients

1 tablespoon avocado or grapeseed oil

¼ cup chopped onions
-
3 mini sweet peppers, sliced into rings

1½ teaspoons Cajun Creole Seasoning Blend, divided

¼ teaspoon sea salt, optional
-
2 cups frozen hash brown potatoes
-
¾ cup sliced fresh baby bella mushrooms
-
10 asparagus spears, trimmed, cut into 3-4 sections

¾ cup prepared Turkey Breakfast Sausage Crumbles
Directions
In medium skillet, heat oil over medium-high heat. Add onions, peppers, 1 teaspoon Cajun Creole Seasoning Blend and salt. Sauté 2-3 minutes.
Stir in hash brown. Cover and cook, stirring occasionally, 6-7 minutes.
Stir in remaining ingredients and ½ teaspoon Cajun Creole Seasoning Blend. Cover and continue cooking 3-4 minutes or until desired doneness.
Notes
Serving Suggestion: Serve topped with a fried egg, if desired.
